  • 1 ripe banana

  • 1 cup milk (dairy or any plant milk like oat/almond)

  • 3 tablespoons chia seeds

  • ½ teaspoon vanilla extract (optional)

  • A small drizzle of honey or maple syrup (optional - usually the banana is sweet enough)

  1. Mash the banana in a bowl until smooth.

  2. Add the milk and vanilla, and mix well.

  3. Stir in the chia seeds.

  4. Mix for about 1 minute to prevent the seeds from clumping.

  5. Pour into a jar or container.

  6. Chill in the fridge for 2-4 hours (or overnight) until the mixture has thickened and become pudding-like.

  7. Stir again before serving.
