Cheesy Veggie Quesadilla - Vegetarian

Ingredients

  • 1 large tortilla

  • ½ cup shredded cheese (cheddar or mozzarella)

  • A small handful of finely chopped veggies (corn, spinach, bell pepper, or whatever your kid likes)

  • 1 tsp butter or oil

  • Optional: mild salsa or yogurt for dipping


  • Instructions

  • Heat a pan on medium and add a tiny bit of butter/oil.

  • Place the tortilla in the pan.

  • Sprinkle cheese evenly over half the tortilla.

  • Add the chopped veggies on top.

  • Fold the tortilla in half and press gently.

  • Cook 2-3 minutes per side until golden and melty.

  • Slice into triangles and serve with yogurt or salsa.
