Heat a pan on medium and add a tiny bit of butter/oil.
Place the tortilla in the pan.
Sprinkle cheese evenly over half the tortilla.
Add the chopped veggies on top.
Fold the tortilla in half and press gently.
Cook 2-3 minutes per side until golden and melty.
Slice into triangles and serve with yogurt or salsa.

A small handful of finely chopped veggies (corn, spinach, bell pepper, or whatever your kid likes)
1 tsp butter or oil
Optional: mild salsa or yogurt for dipping
