Ingredients

  • 1 pack of ready-made pizza dough (or homemade)

  • ½ cup tomato sauce (pizza or pasta sauce)

  • 1 small bell pepper, finely chopped

  • ½ cup sweet corn

  • ½ small zucchini, grated

  • ½ cup mushrooms, finely chopped (optional)

  • 1 cup mozzarella cheese, shredded

  • ½ teaspoon dried oregano

  • ½ teaspoon dried basil

  • 1 tablespoon olive oil (for brushing)

  • A pinch of salt and pepper


Instructions

·  Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.

·  Roll out the pizza dough on a clean surface. Cut into circles about the size of your palm.

·  In a bowl, mix the chopped veggies with a little salt, pepper, oregano, and basil.

·  Place one dough circle on the tray, spread 1 teaspoon of tomato sauce, add a spoonful of veggies, and sprinkle mozzarella on top.

·  Fold the dough in half (like a half-moon) and press edges with a fork to seal tightly.

·  Brush the tops with olive oil so they bake golden and shiny.

·  Bake for 15-20 minutes until puffed and golden.

·  Let cool slightly (the cheese will be hot!) and enjoy your cheesy Pocket Pizza.
