Lightly toast the bread if desired. Butter the slices of bread.
Top one of the slices with lettuce, followed by tomato slices, a cheese slice (optional) and ham. Repeat the layers of tomato, cheese and ham for a thicker sandwich.
Top with the other slice of bread and cut into two halves, triangles or squares.
Serve with chickpea crisps, carrot and cucumber batons and pepper strips for a filling, colourful and nutritious lunch.
