Vegan Rocky Road - Vegan

Ingredients

50g coconut oil
100g golden syrup
250g vegan dark chocolate, roughly chopped
50g Rich Tea biscuits, broken into pieces
100g vegan marshmallows, chopped into pieces
50g glace cherries
50g dried apricots, roughly chopped
50g pistachios, roughly chopped
25g coconut chips

Instructions

  • Place the coconut oil, syrup and chopped chocolate in a heatproof bowl over a pan of gently simmering water, ensuring the bottom of the bowl doesn't touch the water.
  • Heat until melted and combined, stirring periodically with a wooden spoon.
  • Place all of the remaining ingredients into a large bowl and stir to combine.
  • Pour the melted chocolate mixture over the dry ingredients and stir until everything is combined.
  • Transfer to a greased and lined 20cm square tin and press down well with the back of a wooden spoon.
  • Place in the fridge for four hours or overnight.
  • Cut into squares before serving.
