Creamy Broccoli & Peas Pasta - Vegetarian

Ingredients

  • 1 cup small pasta shapes (like macaroni or mini shells)
  • ½ cup broccoli florets (small pieces)
  • ½ cup frozen peas
  • ¼ cup cream cheese (or Greek yogurt for a lighter option
  • 2 tbsp grated mild cheddar or mozzarella
  • A pinch of salt (optional)

Instructions

Boil water:

Fill a pot with water, add a pinch of salt if you like, and bring it to a boil.

Cook pasta:

Add 1 cup of small pasta shapes (like macaroni or mini shells) to the boiling water. Cook according to the package instructions.

Add veggies:

When there are 3 minutes left on the pasta cooking time, add ½ cup broccoli florets and ½ cup frozen peas into the same pot.

Drain:

After the pasta and veggies are cooked, drain them using a colander.

Combine in pot:

Return the drained pasta and veggies back into the pot.

Add creaminess:

Stir in ¼ cup cream cheese (or Greek yogurt for a lighter option) until it melts and coats everything nicely.

Add cheese:

Mix in 2 tablespoons of grated mild cheddar or mozzarella cheese until melted and creamy.

Season:

Add a pinch of salt if needed, and stir.

Serve:

Serve your creamy pasta warm and enjoy!
