Delicious and easy recipe ideas for snack time at home

Snack time is the best time! Whether you're working from home, binge-watching your favorite series or your kids craving a little something between meals, having quick and easy snack ideas is essential. Here are some delicious homemade snack recipes that are simple to make and perfect for satisfying those hunger pangs.

Rise and Shine Parfait


Ingredients

4 cups fat-free vanilla yogurt

2 medium peaches, chopped

2 cups fresh blackberries

1/2 cup granola without raisins or Kashi Go Lean Crunch cereal

Instructions

Layer half the yogurt, peaches, blackberries and granola into 4 parfait glasses. Repeat layers.

Princess Toast


Ingredients

6 slices white bread, toasted

6 tablespoons seedless strawberry jam

1-1/2 cups buttercream frosting

6 tablespoons sprinkles

6 teaspoons silver or gold edible glitter

Instructions

Spread jam over toast. Top with buttercream, sprinkles and edible glitter. Leave toasts whole or cut into shapes.

Carrot Cake


Ingredients

  • 200g carrots

peeled

  • 175g soft brown sugar
  • 200g self-raising flour
  • 1 tsp bicarbonate of soda
  • 2 tsp cinnamon
  • zest 1 orange
  • 2 eggs
  • 150ml sunflower oil

 

For the icing

  • 50g softened butter
  • 75g icing sugar
  • 200g soft cheese
  • sprinkles

Instructions

step 1

Line an 18cm square tin with baking parchment. Ask your grown-up helper to turn the oven on to 180C/160C fan/gas 4. Grate the carrots on the fine side of the grater, then tip them into a large bowl.

step 2

Sift the sugar, flour, bicarb and cinnamon on top of the carrot, then add the orange zest and mix everything around a bit.

step 3

Break the eggs into a bowl (scoop out any bits of shell), then add them to the bowl along with the oil. Mix everything together well.

step 4

Scoop the cake mix into your tin and level the top. Ask a grown-up to put it in the oven for 30 minutes or until the cake is cooked. Cool.

step 5

To make the icing, mix the butter and icing sugar together, then stir in the soft cheese until smooth.

step 6

When the cake is cool, spread the top with the icing and cut into squares. Decorate with sprinkles, if you like.

Chicken nuggets with hidden veg


Ingredients

500g chicken mince

200g cauliflower florets

150g breadcrumbs

50g Parmesan

½ tsp garlic powder

2 large eggs

carrot and cucumber sticks, to serve

Instructions

Preheat the oven to gas 6, 200°C, fan 180°C. Meanwhile, add the mince, cauliflower, 50g breadcrumbs, Parmesan, garlic powder and 1 egg to a food processor and blend until combined.

Place the remaining breadcrumbs in a shallow bowl and crack the other egg into a separate bowl and whisk. Line a baking tray with baking paper, then scoop out 1 tbsp of the chicken mixture and use clean hands to shape into a circular nugget. Dip in the beaten egg followed by the breadcrumbs, then place on the baking tray, then repeat until 24 nuggets are made (6 per person).

Bake for 20 minutes, then allow to cool a little before serving with carrot and cucumber sticks and your favourite dipping sauce.

Tip: If you don't have a food processor, you can combine all the ingredients (finely chopped cauliflower) by hand in a mixing bowl.

These snack ideas are perfect for satisfying cravings while keeping things simple and tasty! Try them out and let snack time at home become a moment of pure enjoyment!
